For the cupcakes batter :
1 1/4 cup all purpose flour
2 tsp baking powder
1/2 cup granulated sugar
pinch of salt
1/4 cup vegetable oil
3/4 cup any vegan milk (i used soy milk)
1 tsp vanilla extract
1 tbsp white vinegar *In a mixing bowl, combine all the ingredients. Bake at 175 degree celcius for 18-20 minutes or until a toothpick inserted in center comes out clean.
For the strawberry buttercream :
200 grams strawberries
1 cup vegan butter at room temperature
3 cups icing sugar
1-2 tbsp milk if needed *Blend strawberries untill smooth, transfer into a sauce pan, cook in medium heat untill reduce in volume.
*Beat butter on high speed untill light and fluffy.
*Add the icing sugar, mix well.
*Add the puree strawberry.
*Add milk if needed to smooth out the consistency.
*Transfer to a piping bag and pipe the frosting onto cooled cupcakes.
