Vegan Matcha Cupcakes With Matcha Buttercream

Kali ini Zingga Nusantara akan kembali berbagi resep dan cara membuat vegan match cupcakes with matcha buttercream, selamat mencoba.

Vegan matcha cupcakes

For the cupcakes :

– 1 1/4 cup all purpose flour
– 2 tsp baking powder
– 1/2 cup granulated sugar pinch of salt
– 1/4 cup vegetable oil
– 3/4 cup any vegan milk (i used soy milk)
– 1 tsp vanilla extract
– 1 tbsp white vinegar
– 1-2 tbsp matcha powder (or more if you like)
– In a mixing bowl, combine all the ingredients.
– Bake at 175 degree celcius for 18-20 minutes or until a toothpick inserted in center comes out clean.

For the matcha buttercream :

– 1 cup + 2 tbsp vegan butter at room temperature
– 3 cup confectioner’s sugar
– 1 tsp vanilla extract
– 1-3 tsp matcha powder (depends on how green you want it)

– In a mixing bowl add the vegan butter, beat on high speed until light and fluffy.
– Add the confectioner’s sugar in three batches and mix until well combined.
– Add the vanilla extract and 1-3 teaspoons of matcha and mix well.
– Fill into the piping bag and pipe a swirl on top of each cupcake.
